Recipe Round-up: Oven-Baked Fries

These were a HUGE pleasant surprise to us- We really enjoyed this recipe and highly recommend following it to the letter. Meaning, don't flake and use standard russet or baking potatoes, and standard bread crumbs. Use the yukon gold potatoes (we found ours in a bag at Wal-Mart), and the Panko breadcrumbs (also found at Wal-Mart next to all the other breadcrumbs in a white box). But the yukon gold's made for great fries because they're a bit smoother in texture than normal potatoes. I'd take these over frozen fries ANY DAY!

Oven-Baked Fries
Prep Time: 10 min.
Cook time: 45 min.
Makes: 4 servings

2 Tbs. light mayo
1 tsp. olive oil
2/3 c. panko bread crumbs
1 Tbs. salt-free fajita seasoning (such as Spice Hunter) or salt-free garlic and herb seasoning (such as McCormick's)
1/2 tsp. salt
4 medium (6 oz. each) Yukon gold potatoes.

1. Preheat the oven to 400F. Coat a regular baking sheet with cooking spray or line with a nonstick liner (or use a nonstick baking sheet).
2. Whisk together the mayonnaise and oil. Combine the panko crumbs, seasoning, and salt on a small plate.
3. Cut each potato into 8 wedges. Brush all sides of the potato wedges with the mayonnaise mixture. Dip the wedges in the crumb mixture to cover each side. Place th wedges on the baking sheet.
4. Bake for 45 minutes, or until the potatoes are crisp and lightly browned.

Make it a meal: serve with 3 oz. grilled chicken breast brushed with 1 Tbs. BBQ sauce and some strawberries.
